Ingredients
Mutton Paya: 250 gm
| Wheat Flour: little bit | Bay Leaves: 4 | Green Cardamom: 4 | Black Cardamom: 1 |
| Star: 1 | Black Peeper: 8 (crushed) | Cloves: 4 | Cinamon Sticks: 2 |
| Chopped Gingers: 1 Tbsp | Chopped Garlics: 2 Tbsp | Onions: 4 (cut into halves) | Salt: 1 Tbsp (as per taste) |
| Butter: 1 Tbsp | Black Peeper Powder: 1 Tbsp | Fresh Corriander Leaves: 1 tsp | Warm Water: 1 L |
Procedure
Step 1: Soak the mutton paya pieces in water for 10 minutes.
Step 2: Wash the mutton paya pieces thoroughly in running water.
Step 3: Massage and scrub the pieces with wheat flour for 5 minutes.
Step 4: Clean the pieces in running water. Keep in strainer for 10 minutes to drain out the extra water.
Step 5: Turn on the gas in medium flame and place the pressure cooker. Pour 1L warm water.
Step 6: Add the mutton paya pieces, bay leaves, black cardamom, green cardamom, cinamon sticks, star, black peeper, cloves, chopped garlics, chopped ginger, onions & salt. Mix properly.
Step 7: Cover the pressure cooker with lid.
Step 8: Turn the gas to high flame and wait for the first whistle.
Step 9: After the first whistle, it will be cooked in low flame for 30 minutes to 35 minutes.
Step 10: Open the lid. Add black peeper powder & butter. Turn off the flame.
Step 11: Add fresh corriander leaves and mix well.
Step 12: Serve in a separate bowl.
Tips
- Step 1, Step 2 & Step 3 are followed to toremove hair from the mutton paya pieces.
- In Step 6, it is better to use less salt.
